French Toast with Raspberry Coulis

A Walk, a Café, and an Unexpected Treat

Some of the best dates aren’t planned—they unfold naturally, guided by curiosity and a willingness to wander. It was one of those days, spent exploring San Francisco on foot, letting the neighborhoods reveal their charm one street at a time. A stop at a small shop led to a purchase of Castelvetrano olives, their bright green color and buttery flavor too tempting to resist.

Eventually, a cozy café offered the perfect place to rest. The kind of spot where time slows down, where the hum of conversation blends with the clinking of coffee cups. The cook, with little else to do, decided to experiment and surprised the table with an unexpected treat—French toast with raspberry coulis. Warm, golden slices soaked in berry-infused syrup, tangy and sweet in all the right ways.

There’s something about an unplanned meal that makes it taste even better. Maybe it’s the spontaneity, or maybe it’s just the company. Either way, that French toast became more than just a dish—it became part of the memory.

Ingredients:

  • Frozen Raspberries or Fresh if Available
  • Brioche Bread
  • 2 Eggs
  • 1 Cup Heavy Cream
  • Vanilla and Cinnamon
  • Sugar (depending on taste)
  • Powdered Sugar for Dusting

Preparation:

Simmer berries with sugar (to taste) in a saucepan until warm. Macerate and strain in a fine mesh strainer (optional) to create a coulis that is seedless. Make a batter by mixing the heavy cream, vanilla, and eggs. Add in sugar and cinnamon depending on taste. Use butter in a frying pan to sauté the French Toast pieces. Fry until golden. Dust with powdered sugar.
